Many AI note tools are built on a business model that depends on that content being valuable beyond just organizing it for you: it gets used to train models, it gets kept indefinitely because storage is cheap and deletion is inconvenient, or it gets fed into an advertising profile alongside everything else the company knows about you. The trouble is that none of this is visible from the app's interface. A capture screen looks the same whether the text you speak disappears after it's organized or lives forever on a server you'll never see, feeding a model you didn't agree to train.
